How do you make waffles light and fluffy?

Do you want to bake tasty, airy waffles quickly and easily without yeast?

There are 4 ways to make fluffy waffles:

  1. use yeast batter: but then you have to wait for the batter to rise: so not quickly
  2. work with self-raising flour: the word says it all: there is a raising agent in your flour,
  3. replace milk with alcohol such as beer. The alcohol will evaporate during baking and cause your waffles to rise
  4. or as in Piet's waffle recipe below: add stiffly beaten egg white to the batter.

TIP!Never close your waffle iron tightly, because then your dough cannot rise at all during baking.

Waffles recipe from Sofie Dumont

Very easy recipe where you:

  1. first stir the wet ingredients together
  2. process the flour in it and
  3. finally stir in egg whites.

Sofie is going to bake soft vanilla waffles with vanilla pod seeds. If you want to keep it cheaper, use a few drops of organic vanilla extract. Or even cheaper: add a pack of vanilla sugar.

How does Sofie make her waffles fluffy?

  • Self-raising flour and
  • Whipped egg whites.

So nothing new under the sun.

What does it do differently than in all classic recipes?

Instead of sugar, Sofie uses runny honey. Result: much less stirring, just whisking the egg whites.

Here's how to make Sofie's easy recipe for vanilla waffles:

“Wet” ingredients:

  • 100 grams of melted butter
  • seeds from 1 vanilla pod
  • pinch of salt
  • 70 ml running honey
  • 2 eggs at room temperature
  • 1/4 liter whole milk

Dry ingredients:

  • 300 grams of self-raising flour

Preparation:

  1. Mix the melted butter with the honey and vanilla seeds.
  2. Separate the yolks from the proteins. Beat the yolks into the butter.
  3. Beat the milk into the butter egg mixture.
  4. Add self-raising flour and mix with a whisk. Stir well until no lumps of flour are visible and you are left with a nice smooth dough.
  5. Beat egg whites with a pinch of salt in another bowl until stiff.
  6. Carefully fold the beaten egg white into the rest of the waffle batter.
  7. Sofie bakes her waffles in a Delonghi Multigrill. Of course, a regular waffle iron is just as suitable. Grease the waffle iron, pour in the batter and bake.

The classic waffle baking recipe from the farmers' association

Compare with Sofie's recipe:

  • The vanilla flavor this time not from vanilla pods, but from packets of vanilla sugar.
  • The proportions of the ingredients are fairly similar. But instead of honey, regular sugar is used.
  • Sofie uses fewer eggs but compensates for the fat from the yolks with more butter.

  • 250 grams of self-raising flour
  • 250 ml whole milk
  • 3 eggs
  • 100 grams of sugar
  • 75 grams of melted farm butter
  • 1 pack of vanilla sugar

How to quickly bake waffles with self-raising flour

  1. Beat the egg white until stiff.
  2. Using a whisk, stir the flour with the milk and yolks into a smooth batter.
  3. Then stir in the melted butter, sugar and vanilla sugar.
  4. Finally, fold in the stiffly beaten egg white.
  5. Start baking your waffles immediately and serve them immediately after baking.

Minute waffles grandmother's style – without batter?!

Did you know that you can bake delicious “minute waffles” from old slices of white bread?

You do it like this:

  1. Spread butter on 2 slices of bread.
  2. Sprinkle brown sugar and some cinnamon on top.
  3. Place the other slice on top (butter inside).
  4. Grease the waffle iron and bake briefly: done!

Ingredients

  • 125 ml Full Milk
  • 100 gram flower
  • 85 gram butter
  • 6 tablespoons of sugar
  • white of 6 eggs
  • yellow of 3 eggs

How to prepare

  • Melt the butter in a pan.

  • Take a bowl and put the flour in it. Make a well in the center and fill with the egg yolks, milk and warm butter. Beat with a whisk until a smooth batter without lumps.

  • Take another bowl and put the egg whites in it. Add half the sugar and beat with an electric mixer. Halfway through, add the rest of the sugar. Beat until the egg white is completely stiff.

  • Heat the waffle iron.

  • Add the egg white to the batter in the other bowl and stir together.

  • Start baking the waffles immediately, about 5 minutes per batch.
