This is a simple oneNaan Recipe– soft and fluffy, like in a Pakistani/Indian restaurant.Many people think of naan as only having oneTandoor-Ofencan be baked with charcoal. Naan recipe – the traditional preparation

Traditionally they are served in a very hotTandoor-Ofenbaked with charcoal or wood fire. The naan breads are stuck to the inside of the oven. The tandoor oven stores a very high heat of up to 500° degrees and therefore fills the inside of the flatbread with air bubbles and bakes it perfectly.We had naan bread very often, freshly prepared by my mother. She always used our tandoor oven. But when we had visitors and a lot of flatbreads had to be ready in a timely manner, she also used the pan for them. I'll tell you ours todayNaan Recipe, this is prepared on the stove with a pan.The naan breads are extremely delicious, soft, airy and with beautiful golden brown spots on the surface. Let's take a closer look at the ingredients :-)

The ingredients at a glance

  • Flour.Wheat flour type 405 is best suited for naan bread
  • Yeast.I used dry yeast for this recipe. You can also use fresh yeast. Then prepare according to the package instructions.
  • Backpulver.You can also replace baking powder with baking soda and 1 teaspoon of vinegar.
  • Salt. If you plan to eat it with a spicy curry dish, salt can also be left out.
  • Yoghurt & milk.Should be at room temperature. For the vegan version: use soy yogurt & oat milk.
  • Liquid butter.It must not be too hot, otherwise there is a risk that the yeast will be destroyed. It should be lukewarm.
  • Miscellaneous:Fresh herbs, garlic and butter.

The step-by-step instructions

  1. Place the dry ingredients in a large bowl and mix together.
  2. Gradually add the yoghurt, the melted butter and milk and knead thoroughly into a smooth dough. Since it is a slightly wet dough, you can lightly oil your hands. This makes kneading easier. Alternatively, you can use a kneading machine.
  3. Cover and let rest for approx. 60-90 minutes. (The volume should have increased significantly).
  4. Carefully turn the dough out onto a floured surface and cut into quarters.
  5. Form each part into a ball. Cover the balls with a tea towel and brush the surface with a little oil to prevent them from drying out. Let rest for another 15 minutes.
  6. Heat a non-stick pan to full heat.
  7. First, carefully pull the dough balls apart with your hands. Use the rolling pin later if necessary.
  8. Place the flatbread on the hot pan.
  9. Bake for about 40 seconds on both sides. When turning for the second time, press in places with a tea towel. So that the heat can penetrate into the naan bread.
  10. Spread the fresh naan with warm liquid garlic butter and top with fresh herbs.

Does this naan recipe contain eggs?

There are no eggs in this recipe. For vegan naan, yogurt, butter and milk can be replaced with plant-based products.

Difference between naan recipe and roti recipe?

Naan undRotiare both flatbreads, but differ in the ingredients used.
Roti or chapati is made from whole wheat flour and contains no yeast.
Naan is made from all-purpose flour/wheat flour and requires yeast and baking powder.

SHIBA’S NOTES ON NAAN RECIPE:

  1. The resting time for the dough may vary depending on the temperature.
  2. If you melt the butter, let it cool to lukewarm (or mix it with clear milk) before using it, too hot would destroy the yeast.

Naan – a simple recipe for naan bread in a non-stick pan. Soft & fluffy, like in Indian restaurants. This is the perfect recipe for that! We had naan bread very often - freshly prepared by my mother. She always used our tandoor oven

Ingredients

  • 260 g Wheat flour type 405 + more to roll out
  • 1 TL Backpulver
  • 1 TL Yeast
  • 1 TL Salt
  • 100 g yogurt room temperature
  • 80 ml Milch lukewarm
  • 40 g liquid butter alternatively: neutral oil

Miscellaneous:

  • something chopped herbs e.g. Parsley
  • something melted butter
  • something Flour for rolling

Instructions

  • Place the dry ingredients in a large bowl and mix together.

  • Heat up a pan. Check with your palm whether the pan is already hot.

  • First, carefully pull the dough balls apart with your hands. Use the rolling pin later if necessary.

  • Bake for about 40 seconds on both sides. Turn over the second time and gently press in places with a tea towel.

  • Spread the fresh naan with warm liquid butter and top with fresh herbs.

You can freeze the dough, but it is important to remember that you freeze it before the resting time (before it rises) and in portions.

I'm convinced it wasn't the recipe, but unfortunately the naans didn't turn out really fluffy. I have to admit that baking is not my core competency. Maybe it wasn't warm enough for the dough. Or could it be because I used 550 wheat flour? But the naans tasted very good.

Oh that's a shame, maybe it was because they were rolled out too thin? Been on the stove too long? You have to try this out a few times to find out what works best with the pan and stove temperature you have.

Dear Shiba,
I tried the naan recipe for the first time yesterday, it was super fluffy and we really enjoyed it! I gave the dough a lot of time at around 22 - 23 degrees! Process the ingredients at around 7 a.m., form 6 balls after about 3 hours and put them in the pan at lunchtime. Good things come to those who wait!!

There could be several reasons why the dough didn't rise. Either you added something that was too hot, or the room temperature wasn't enough to heat up.

Dear Shiba,
I love your recipes and have already cooked many of them and varied them depending on the ingredients I have. I don't make the naan bread with yogurt but with grained cream cheese and I replace the milk with equal parts oat and soy milk and add a little fresh turmeric for the color. Hello, before I start I have a question. The 8g yeast is the dry yeast or fresh (42g cube) yeast? Think dry, but want to be sure. Thank you for your response. I found lots of delicious dishes and am looking forward to cooking them. Start with the butter chicken with homemade garam masala. Shopping and cooking different dishes at the weekend and making a selection that the children and grandchildren will enjoy in their holiday home in Hungary. Hmm... that's a shame, of course. Was it warm enough? I once had the same problem and for me it was because the yeast had already expired 🙈. Maybe it's because?
How long does the dough leave? This can be completely different.

Very rarely is there such a clearly structured concept as here. Everything is right and it works!
Of course you can also use yeast, which is available in cubes. As with all recipes

Dear Shiba, we also add very little salt, just because of the children and I agree with you, together with the chana masala it doesn't matter that much. Yesterday I made the naan again, but as a dumpling for a kind of kebab, so I really only added a pinch of salt.
