Mexican cooking is no longer taboo in low-carb cuisine. Here you can read how to make your own wraps. Without corn or wheat flour, so gluten-free. With this recipe you get 4 grams of carbohydrates per wrap.

Ingredients

  • 1 pieces Eggs lightly whipped
  • 100 gram almond flour
  • 25 gram coconut flour
  • 2 teaspoons Xantangom
  • 1 teaspoon baking powder
  • ¼ teaspoon salty
  • 2 teaspoons apple cider vinegar
  • 3 teaspoons water

Instructions

  • Combine flour, baking powder, xanthan gum and salt in a bowl and mix thoroughly. Use a food processor, whisk or hand mixer.

  • Use a food processor or hand mixer. Add vinegar while kneading. When this is well distributed, the egg is beaten. And finally water. The dough has been kneaded sufficiently when it forms a (sticky) ball.

  • Wrap the dough in shrink wrap and knead by hand for a few minutes. Let rest for 10 minutes.

  • Divide the dough into 8 pieces. Roll a ball and place it between 2 sheets of baking paper. Now roll out the ball evenly with a rolling pin until it forms a tortilla of approximately 12 centimeters in diameter.

  • Heat a frying pan on a medium heat. The pan should be warm but not too hot. (Test with a few drops of water; if they evaporate immediately, your pan is too hot.)

  • Fry your low-carb wrap briefly (4 to 6 seconds) and immediately turn it over. Now fry it for half a minute until light brown on both sides.

    A real tortilla must have the characteristic lightly fried spots, but must not be fried for too long. This way the wrap remains stretchy and flexible.

  • Keep the wraps warm under a kitchen towel and enjoy immediately.

Low carb Mexican cuisine?

It almost sounds like a contradiction. Mexican food anda low-carb dietaren't exactly the best of friends. For example, many dishes are held together by a tortilla. And that tortilla is filled with a mix of meat, herbs and… yes, beans.

Earlier we showed you that you canchili concarne, with a few adjustments, can easily be made low-carb (spoiler alert: more meat, less beans). But a quesadilla without a wrap is a bit like a clown without a circus. And of course you want onehealthy chicken dishput on the table.

So the question arises:

How do I make low-carb wraps?

If you want to make a wrap low in carbohydrates, it is simply a matter ofthrow out carbs. Duh! Because the traditional tortilla recipe consists mainly of corn flour, you quickly get tired of it20 Kh per wrap. So don't do that.

You replace cornmealso simply with low carb ingredients. How? I found mineanswerwith this recipe; a mix of almond and coconut flour. Bam, perfect. Agluten freeand low-carb dough for all our Mexican dreams.

Gluten free tortilla recipe ingredients

Before you rush to the supermarket to get all the ingredients, I will briefly explain them to you.

  • Almond flouris an old acquaintance in low-carb cuisine. It's a great replacement for wheat flour and we have been experimenting happily with abc def gef.
  • Coconut flourensures that the wraps remain a bit stretchy and “oinky” and do not become stiff pancakes.
  • Xantangom. This one was new to me. Xanthan gum is a natural baking improver. which ensures that the dough becomes and remains malleable. It replaces gluten. You can order this ingredient fromHolland & Barrett. At the Zaanse large grutter I saw Xanthan gum, which contains considerably fewer carbohydrates. Let's see if this is in stock, you can no longer order it online.
