What is a cookie?

Kladdkaka is a soft, compact cake with a chocolate flavor and, as the name reveals, it has a sticky texture. The most important difference between sticky buns and other sugar cookies is that baking powder is not used. It is precisely the absence of baking powder that makes the sticky cake so sticky and delicious, because no air bubbles form.

Sticky or tough - sticky cake consistency

Some people want their sticky cake very sticky and creamy, others want it a little firmer or tougher. Both the baking time and the ingredients determine the texture of your sticky cake. For a tougher cake, use real unsweetened chocolate and more eggs. With these two ingredients, your sticky cake will hold together better and you can therefore bake it for a shorter time for a stickier, tougher sticky cake. If you only use cocoa or semi-sweet chocolate, your sticky cake will need to be baked a little longer so as not to be runny and the texture will be creamier rather than tough.

The baking time is different from oven to ovenand of course also depends on how sticky you want your sticky cake. If your sticky cake is runny, you have baked it for too short a time, and if it is more like a drier cake, you have baked it for too long. If your sticky cake is more like sponge cake in texture, you probably have both too much flour and too long a baking time.

Kladdkaka is at its best when served chilledor after standing in the fridge for a while, i.e. not straight out of the oven. Keep in mind that the cake will harden a little. If you have baked a cake that you think is far too loose, try storing it in the fridge or freezer overnight and eat it the next day.

Seven quick tips for a perfect cake

  • Choose high-quality cocoa: It gives the cake an intense and rich chocolate taste.
  • A small pinch of salt can highlight the chocolate flavor and give depth to the cake.
  • Avoid overworking the batter: To keep the cake juicy and sticky, don't overbeat the batter.
  • Use ingredients at room temperature: This gives a smoother batter and a better cake.
  • The texture of the sticky cake depends on the baking time - even a few seconds can make a big difference.
  • The cake will continue to set as it cools, so take it out of the oven when it's still a little gooey in the middle.
  • Allow the cake to cool in the refrigerator: This improves both taste and texture before serving.

Scrap cake - Tips for success with scrap cake

  • Sift flour and cocoa. By sifting flour and cocoa, you avoid lumps in the batter and it is easier to stir the batter smoothly.
  • Weigh the ingredients. Weighing the ingredients ensures that you get exactly the right amount, which increases the chance of a successful result. A dl of wheat flour weighs 60 g. And 1 dl of sugar weighs 90 g.
  • Do not whisk. If you beat, air will enter the batter and your sticky cake will be more like a sponge cake in the oven. Therefore, be careful to stir the batter. And stop when the batter is just mixed.
  • Keep track of time. If you bake the cake too long, it will become dry. So keep an eye on the time and rather take it out a little too early.
  • Bake the cake in the middle of the oven. This is so that the cake will have an even result.
  • Season the whipped creamwith, for example, herbs or flavor essences. Some tips on good flavors for whipped cream are cinnamon, toffee and white chocolate. For a very simple chocolate cream, add a little cocoa. Another good thing to add to the whipped cream is a littletart freeze-dried raspberries.
  • Kladdkaka is excellent for freezing and thawing. The easiest thing is to let the cake cool and harden a little in the refrigerator and then cut out portions to freeze that you can easily take out in the amount you need.
  • Kladdkaka can also be used as a cake base!Bake thinner puff cakes and fill with chocolate ganache, dumle fluff, mousse or something else yummy for a real chocolate dream for a cake!

The history of the cookie

No one really knows for sure how the scratch cake was invented. Some believe it came about through a failed attempt at baking brownies, while others believe the kladdkake is an evolved version of French chocolate cake. Kladdkakan seems in any case to have existed in Sweden since the 1970s and since 2008 we celebrate Kladdkakan day on November 7.

Different types of sugar

In the basic recipe for kladdkaka, caster sugar is used. But there are actually a few more varieties that can be fun to experiment with. Try replacing all or some of the granulated sugar with some of these varieties:

  • Cane sugar- As the name reveals, cane sugar is produced from sugar cane. It is a dry sugar and has a rich, caramel flavor.
  • Brown sugar- Brown sugar is a mixture of sugar crystals and dark cane sugar syrup. It has a spicy and less sweet taste.
  • muscovado sugar -Muscovado sugar is a fine-grained and moist sugar, which is produced from sugar cane. It is available in a light and dark variant. The light variant has a taste of caramel and the darker variant has notes of licorice in the taste.

Serving suggestion

Scrapbook cake

Bake thinner puff cakes and use as a cake base. Fill with e.g. chocolate ganache, dumle fluff or something else yummy for a real chocolate dream for a cake.

Kladdkaks pastries

Bake the puff pastry as usual and use gingerbread molds to press out portions. Use your favorite topping and decorate with sprinkles.

Gluten-free, lactose-free and vegan

Gluten-free sticky cake

To make the cake gluten-free, you can replace the wheat flour with an equivalent weight of gluten-free mix. Remember that 1 dl wheat flour weighs 60 g.

Lactose-free cake

If you want a lactose-free cake, you can use lactose-free milk and dairy-free margarine instead. You can also replace the butter with a flavorless oil such as rapeseed oil. But to get roughly the same fat content, you need to take 20% less oil than the amount of butter. So instead of 100 g of butter, you take 80 g of rapeseed oil.

Vegan scratch cake

For a vegan version, you can replace the milk with any plant-based drink. You can replace the butter with rapeseed oil according to the tip above or some plant-based alternative to butter. You can exchange the eggs for chickpea spade, also called aquafaba. For one egg, you take 3 tablespoons of aquafaba instead. It is also possible to replace the eggs with chia seeds. A tip is to grind the seeds in a mortar to avoid seed crunch in the sticky cake. For one egg, take 1 tablespoon of chia seeds and mix with 3 tablespoons of water. Then let it stand for about 10 minutes before stirring it into the batter.

Which mold should I use for a sticky cake?

You can, of course, bake kladdkaka in any shape you like. However, we recommend that you use a mold with removable edges. In addition to the result being nicer, it will also be easier to transfer the cake to a serving plate. Plus it will be easier to cut pieces when serving. Here you will find springforms in our online store >>

How do I know when the scratch cake is ready?

If you keep track of the time according to the recipe but still feel unsure whether the cake has been baked, you can easily check. You can tell that the cake is ready when the edges are firm, while the cake is a little wobbly in the middle. Also check that the entire surface has had time to be baked, otherwise you will get a sticky cake that is still raw.

Why does the scratch cake get crunchy?

If the texture feels crunchy when you eat it, it is because the cake was not baked long enough. So the crunchy part is the sugar that hasn't had time to melt. Increase the baking time next time.

How do I make scratch cake in the microwave?

Use the basic recipe above and bake in a greased porcelain pie tin. Bake the cake in intervals of 4-6 minutes depending on the microwave oven, check often at the end so you don't overbake the cake.

How long does the scratch cake last?

Kladdkaka lasts a couple of days at room temperature, 1-2 weeks in the fridge and at least 3 months in the freezer.

How to store scratch cake?

Cut it into pieces and store it in a jar with a tight-fitting lid with baking paper in between, dust with a little icing sugar before serving. Remember to bring out the sticky cake in time as it always tastes best at room temperature.

Can you freeze cake batter?

Yes, the scratch cake lasts at least 3 months in the freezer. Make sure it is stored in an airtight container or tightly wrapped.

When is scratch cake day?

Kladdkakans day is celebrated every year on November 7. Dagn is becoming more and more famous and popular with each passing year. Because who doesn't love to have another opportunity to eat a really sticky and good sticky cake! At least 2 million cookies are eaten on the day of the cookie, of course you should also bake one then!
