Keto ice cream – chocolate bomb

Ingredients:

  • 2 cups cream
  • 1 1/2 cups unsweetened cashew milk (or almond or coconut milk)
  • 1/2 Tasse Raw Kakaopulver
  • 1/2 Tasse Steviapulver
  • 4 large egg yolks
  • 85 g dark chocolate min 85%
  • 1/2 TL Vanille-Flav Drops (z.B. vonMYPROTEIN)
  • 1/4 to 1/2 teaspoon liquid stevia extract (or other sweetener, to taste)
  • 1/4 tsp xanthan gum (optional, helps reduce)

Preparation:

  1. Start by setting a bowl aside over an ice bath.
  2. In a medium saucepan over medium heat, stir together the cream, cashew milk, cocoa powder and stevia until well combined and the mixture reaches about 76°C.
  3. In a bowl, slowly mix the egg yolks with 1 cup of the hot cream mixture, whisking constantly to let the yolks slowly warm up so that they do not flocculate.
  4. Then carefully put everything back into the pot and continue stirring until the mixture has become thick and sticks to the back of a spoon.
  5. Remove from heat and add chopped chocolate.
  6. Let this stand for 5 minutes.
  7. After the 5 minutes, stir the mixture until smooth with a whisk.
  8. The mixture in the bowl must then be cooled over an ice bath for 10 minutes.
  9. When everything has cooled thoroughly, wrap the mixture tightly in plastic and place in the refrigerator for at least 3 hours.
  10. Using a whisk, combine an additional 1/2 cup of cashew milk, vanilla extract, and stevia extract into the mixture (the mixture will be very thick until these ingredients are combined).
  11. Sprinkle the surface with xanthan gum and stir vigorously with a whisk.
  12. Pour this mixture into the container of an ice cream maker and then mix it according to the machine manufacturer's instructions.
  13. Once loosely mixed, pack the mixture into an airtight container and freeze for about 1-2 hours until the mixture is a little firmer.
  14. The keto ice cream is ready 🙂

  • 60 ml Sahne
  • 2 THEErythritol
  • 15 drops of liquid stevia
  • 2 EL Raw Kakaopulver
  • 1 EL Pulverkaffee Instant
  • 1/4 TLXanthan(makes the ice cream firmer)

preparation:

  1. Place all ingredients in a mixing bowl (except the xanthan gum).
  2. Mix everything well with a hand blender and then add the xanthan gum so that it becomes a thick mixture.
  3. Pour the mixture into the ice cream maker and follow the dealer's instructions until it's ready - easy 😉

  • 4 tbsp MCT oil to make the ice cream nice and smooth
  • ½ cup unsweetened almond milk or water
  • 4 whole eggs
  • 4 egg yolks
  • 1 vanilla bean, scraped clean, or 2 teaspoons vanilla
  • 1 teaspoon Stevia glycerite for the desired sweetness
  • ½ tsp salt * helps keep the ice cream soft
  • ¼ cup unsweetened cocoa powder

For the PEANUT BUTTER SWIRL:

  • ½ cup natural peanut butter (should be nice and soft)
  • ¼ TaxesCoconut oil, melted
  • 1 teaspoon stevia for sweetness

preparation:

  1. Mix coconut oil, MCT oil, eggs, egg yolk, almond milk/water, vanilla, natural sweetener, salt and cocoa powder in a blender until everything is nice and smooth.
  2. Then pour the mixture into the ice cream maker and process according to the manufacturer's instructions.
  3. Meanwhile, mix the peanut butter with coconut oil and stevia until everything is smooth. Cool in the refrigerator.
  4. Add the peanut-coconut mixture to the ice cream mixture and let it mix again briefly in the ice cream maker until it is completely absorbed.

Ketogenic Ice Cream Recipe: After Eight Ice Cream

Ingredients:

preparation:

  1. Place cream and almond milk in a microwave-safe bowl and microwave for 2 minutes to heat through.
  2. Place remaining ingredients in a bowl.
  3. Whisk everything together with the warm cream and almond milk and put it in the microwave again for a minute.
  4. Stir everything briefly once.
  5. Place in the microwave for another 30 seconds and then stir again. (Don't try to do this all in one step or you'll end up with sweet green scrambled eggs). Alternatively, you can heat it in a pot until everything is whisked, but you have to be very careful not to let it get too hot.
  6. Then the mixture must be poured into a bowl to cool so that no lumps form (for about 15 to 20 minutes) and everything must be stirred well every now and then until it is cold.
  7. Now the mixture can be poured into the ice cream maker and prepared according to the manufacturer's instructions.

Ingredients:

For condensed milk:

  • 800 ml coconut milk
  • 80 gErythritolor stevia (in powder/powder form)

For the cookies:

  • 50 g Mandelmehl
  • 3 Tbsp Cocoa Powder
  • 50 gErythritolor stevia (granules)
  • 1 TLBackpulver(gluten free)
  • a pinch of salt
  • 1 No (L)
  • 1 EL Coconut Beer or Ghee

For the ice cream:

  • 600 ml whipped cream
  • Condensed milk – which you just made
  • Cookies – the ones you just made

Preparation:

condensed milk

  1. Pour the coconut milk into a saucepan and bring to a boil over medium heat.
  2. As soon as the coconut milk starts to boil, turn the heat down slightly.
  3. Reduce the coconut milk to about half the volume (about 40-45 minutes).
  4. Once the milk has reduced, turn off the heat and add the erythritol.
  5. Pour the condensed milk into a mixing bowl and let it cool at room temperature.

Cookies

  1. While you prepare the condensed milk, make the cookies.
  2. Preheat the oven to 150°C.
  3. Add almond flour, cocoa powder, erythritol, baking powder and salt to a mixing bowl and mix well.
  4. Add egg and coconut oil and mix with your hands.
  5. Lay the dough out on baking paper and also cover it with baking paper.
  6. Roll out the dough to about 1/2 cm thick.
  7. Place the dough and baking paper on a baking tray and put it in the oven for 12-15 minutes until it becomes nice and crispy.
  8. Don't be surprised if the "biscuit" is still a little soft, as it cools down it gets its crispy consistency.
  9. Break the “big cookie” into small pieces.

Eis

  1. Place a large container in the freezer (8-inch square baking pan lined with baking paper).
  2. In a bowl, whip the cream, but be careful so that it does not curdle.
  3. Gently and slowly add the cooled condensed milk to the whipped cream. Stir the mixture very lightly and loosely in between.
  4. Mix the cookie pieces (not all) into the condensed milk cream.
  5. Pour the ice cream into the container that you previously placed in the freezer and sprinkle the remaining cookie pieces on top.
  6. Place the container with the ice cream back in the freezer for 4-6 hours.
