Ingredients used

Classic recipes are known for being very simple yet delicious! And this recipe, which tastes as good as grandma's original, is no exception. Made with simple, fresh ingredients and made in one pan (no oven required!), it's cheap, hearty and filling!

  • Potatoes:Use a type of potato with a medium starch content so that they stay firm when cooked and crisp up when fried.
  • Smoked tofu:Tofu is a great plant-based source of protein and serves as an alternative to classic bacon in this recipe. It gives the dish a different texture and a smoky flavor.
  • Onions:Beautifully fried, they make the fried potatoes wonderfully spicy and aromatic.
  • Parsley:for a fresh taste and more spices.
  • Rapeseed oil:to fry. You can also use other vegetable oils with a high smoke point such as avocado, peanut, and sunflower oil. Margarine or vegan butter are also suitable.

  1. Cooking jacket potatoes:First, cook the whole potatoes in a pot of salted water. Then drain and let it evaporate.
  2. Cutting potatoes:Then peel and cut into slices about 0.6 cm thick.
  3. Fry potatoes:Next, heat some oil in a large nonstick skillet over high heat. Place the potato slices side by side on the bottom of the pan and fry for about 4-5 minutes. Once the bottoms are golden brown and crispy, turn the potato slices over and fry the other side for 3-4 minutes.
  4. Sauté Onions and Tofu Bacon:In the meantime, cut the onion into rings and dice the tofu. Then fry both in another small pan with a little oil. Then add to the potato slices and season with fresh parsley, salt and pepper.

Tips + tricks for perfectly crispy fried potatoes

  • It's best to cook the potatoes the evening before, or use leftover potatoes from the day before.
  • After cooking, let the potatoes steam out well and pat them dry thoroughly before frying so that they become nice and crispy in the pan.
  • It is important to cut the potatoes into equal-sized slices so that they cook evenly.
  • Please do not overfill the pan. The potatoes should be placed next to each other.
  • Be careful not to turn the potatoes too early! Let the potato slices fry undisturbed for about 4-5 minutes before turning them over for perfectly crispy fried potatoes!
  • In addition to parsley, salt and pepper, you can also use other spices and herbs to enhance the flavor such as rosemary, thyme, oregano, paprika, garlic powder, etc.

  • Place the potatoes and their skins in a pot of salted water for about 10 minutes(depending on size)Cook until al dente(or use jacket potatoes from the day before).

  • Then drain the potatoes and let them steam out. Then peel and cut into slices about 0.6 cm thick.

  • Heat the oil of a large skillet over high heat. Arrange the potato slices side by side at the bottom of the pan and fry for about 4-5 minutes without turning. Once the underside is golden brown and crispy, turn the potato slices over and fry for another 3-4 minutes.

  • Meanwhile, fry the onion rings and tofu cubes in another small pan with 1-2 teaspoons of oil. Then add to the potato slices and mix. Season with fresh parsley, salt and pepper.
