List of ingredients

  • For the dough
  • 500 gr wheat flour
  • 300 ml milk, lukewarm
  • 25 gr verse gist
  • 50 g butter, at room temperature
  • 25 g white castor sugar
  • 10 grams of salt
  • For the filling
  • 1pastry cream recipe
  • Further needed
  • straw flower
  • vegetable oil (e.g. sunflower oil)
  • 1 egg, beaten
  • clarified butter (see tip below)
  • icing sugar, for dusting

Making cream rolls

Knead all ingredients (except the butter) into a smooth, smooth dough. Then add the butter in stages.

Divide the dough into 12 pieces and roll them up smoothly.Click here for more information about balling up small rolls.Place the balls on a baking sheet and cover with plastic wrap. Let the balls rise for 20 minutes.

Flatten the balls to remove the air and roll them with a rolling pin into an oval slice. Brush half the slice with vegetable oil and fold the slice in half. Place the balls on a baking tray lined with baking paper and brush them with the beaten egg. Let rise for 70 minutes in a warm and humid place.

Baking cream rolls

Preheat the oven to 250°C.

Place the baking tray in the oven and reduce the oven temperature to 240 °C. Bake the balls for 8 to 12 minutes.

After baking, brush the buns with clarified butter. Carefully pull or cut them open and fill them with pastry cream. This works best with a piping bag with a serrated nozzle. Finally, sprinkle them with icing sugar using a tea strainer.

Tip: How to make clarified butter:

1 Place the butter in a saucepan and place over low heat.
2 The butter will now start to melt. You see that two liquids are formed: yellow, transparent fat and white, cloudy liquid.
3 Carefully pour the transparent fat into a small bowl. Make sure the cloudy liquid remains in the pan.
4 The fat in the bowl is the clarified butter.

I recently made Challah (Jewish braided bread) from it, which was really tasty! I also want to make the pudding rolls sometime, just delicious with coffee. The only problem; there are just the two of us; is there another good way to store these rolls? I don't think freezing is possible in this case...?

You can freeze unfilled baked rolls, but not filled ones.

I have been trying to bake my own bread for several years. Because I like it but also because I like it better. Yet I have never managed to get a nice crumbly bread. I think the rising goes well, but if I put it in the bread tin or put it on the plate, I don't get any oven rise during baking.
Would things go better with this bread Bible? I have no idea what's wrong with me. I finally gave up, unfortunately.

Wil Roos-Mulder, if you don't get oven proof, you have let the rolls rise too long. You have to let them rise long enough that when you press them with a finger, the print springs back very slowly. If the print remains, they have risen too far.

it says "Pull or cut them open carefully" but when I look at the photo they are folded in half. Does folding in half work (without the bread being compressed at the bending point)? and shouldn't the bread cool first before you put the pudding on it?

Because the dough sheets are brushed with oil before they are folded, they do not stick together. This way you can easily separate them again after baking. It is indeed very important that the rolls have cooled down before you put the pastry cream on them.

I have sometimes made pudding rolls from a regular loaf because I never had the right recipe for the roll itself, so on that note, thanks for the recipe. but the next thing I always made the pudding from a bag but something went wrong because it looks good and firm on the sandwich but after 5 minutes it becomes liquid again and runs out of the sandwich ?? what am I doing wrong or what is the solution.

Pastry cream is so easy to make, why would you make it from a bag? In addition, I think it is much better to make it yourself and you know exactly what is in it. I always use Rutger's recipe.
